I noticed in iPod's tech specs it mentions the following:
Voice recording settings:
Low (22.05 KHz, mono)
High (44.1 KHz, stereo)
what?? Someone please explain...

Are you not aware of iPod's voice recording capabilities? All you need is a Belkin microphone for it.
